Anti Aging Anti Wrinkles Recipe –Cold Cucumber Avocado Soup

This is a delicious, satisfying cold soup with the added beneficial fats from the avocado.

300ml fresh cucumber juice (about 2 cucumbers)
60ml fresh lemon juice
1 tablespoon chopped green onion
1 tablespoon chopped red onion
1 tablespoon chopped fresh parsley
1 large ripe avocado, peeled and seeded
1 large or 2 medium garlic cloves, minced
3 small sprigs fresh basil, chopped (optional)
1 teaspoon tamari or light soy sauce
1 to 2 teaspoons curry powder, or to taste
1/2 teaspoon ground cumin

1. Combine the juice and all other ingredients in a blender and puree until smooth. If the soup is a bit thick, you may add little more cucumber juice or lemon juice.
2. Pour the soup into bowls and serve cold. You may garnish with fresh basil or any other fresh herbs of choice.
